Squash & Baby Peppers

Now that it’s getting warmer, it’s time to fire up the grill.  For this week’s recipe from Byrant Terry’sVegan Soul Cookbook,” we’re keeping it simple with Mixed Herb Marinated Grilled Summer Squash and Peppers. If you need to throw some turkey Italian sausage on the grill along with it, I won’t be mad at you. It’s Memorial Day, so I won’t kid myself! I am sharing this today in case you want to try it tomorrow!

Grilling vegetables, according to Chef Bryant Terry, is one of the easiest ways to feed a lot of folks at a summer cookout, but considering the circumstances this year, let’s not entertain a LOT OF FOLKS! If you don’t have a grill, or live in an apartment, you can also cook this recipe under a broiler. He also suggests threading the squash and peppers along with some mushrooms and onion chunks onto skewers AFTER you marinate.

Veggies

1 1/2 lbs mixed summer squash (cut into 1/2 inch slices lengthwise)

1 large red pepper

1 large green pepper

1 large yellow pepper (Trader Joes sells a bag with one of each!)

Grill the squash and peppers over high heat, turning occasionally until charred. Transfer squash to a serving platter. Peel the charred skin from the peppers. Cut lengthwise and discard seeds and stem. Add to serving platter. (A spritz of marinade wouldn’t hurt. Also, if I am skewering veggies, I just cut the peppers into chunks before adding to marinade along with the other veggies) I’m pretty sure we have all grilled veggies before, but try this marinade.

Marinade

For the mixed herb marinade which yields about 3 1/4 cups:

In a large bowl combine all of the ingredients and mix well the following:

1/4 cup freshly squeezed lemon juice

3/4 cup orange juice (freshly squeezed is best!)

3/4 cup freshly squeezed lime juice

1/2 cup apple juice

2 tbs minced fresh basil

2 tbs minced fresh parsley

2 tbs minced fresh rosemary

2 cloves of minced garlic (I always add more garlic!  I love it and it’s good for you!)

2 serano chilis seeded and minced

1 1/2 tsp coarse sea salt
