
Well, Iโm late this week. And I know you were all waiting around to read this post thinking, โNow what am I supposed to do with those four minutes?โ Rough, crazy week! I will leave it at that.
Okay, so obviously, the holidays are going to look a bit different this year. No matter which holidays, you celebrate, Hanukkah, Christmas and/or Kwanzaa, the reality is, it just wonโt be the same in 2020!
Many may be thinking, โWell, this is just going to suck!โ But it doesnโt have to. Different, isnโt necessarily a bad thing. The eggnog glass, depending on how you look at it, is either half full, or half empty. (Or, whatever you choose to drink!) At this point, I will be celebrating waking up and breathing!
While the number of folks at your table this year might be smaller in size, you can still find ways to have an enjoyable holiday. For those that have less folks at the table because they lost folks, my heart goes out to you and I am deeply sorry for your loss.
For folks that have scaled back the festivities to protect themselves and others from illness, it is right decision. For those that are still planning a gathering with family and friends from outside of their immediate household, I just hope that you will take the necessary precautions and follow the suggested guidelines. (Which you really arenโt since the suggestion is NOT TO!)
If possible, you or your guests should get tested within two or three days of the gathering. If you have insurance, Pixel Labs will send you a test to self-administer at no cost to you. https://www.pixel.labcorp.com/covid-19. You will receive it within a day of ordering. You can swab and return it in a prepaid Fedex and have your results within 48 hours. Then, the key is to stay safe until the gathering. Once you test, you really need to quarantine. If you can avoid public transportation, do so!
I know that for me and mine, we will be following the advice of the scientists (Yes Retrumpians, SCIENTISTS!) and keeping our holiday celebrations within our immediate family!
Many families will be celebrating this holiday season individually or virtually. Some, (possibly many) will find themselves alone. Alone can be difficult any time of the year, but particularly hard during the holidays.
That being said, one thing that I have learned in all these years is that more isnโt always better. Sometimes, itโs just more. Look at that half full glass of Nog! (Just get more. Youโre not driving! Insert big-eyed emoji hereโฆ) A small intimate dinner and some good old-fashioned bonding might be just what we need.
Perhaps make meal preparation a family event instead of slaving away alone in the kitchen! Maybe itโs time that the lazy teenager upstairs playing video games learned how to roast some Brussels sprouts! You know what would be really fun? Film the meal prep. (Just ask the kids. They know how to do all that!) Create your own holiday cooking show! Who knows? Netflix might buy it. They apparently buy anything and everything! (Seriously!) Worst case, scenario is that it will provide years of laughter at how bad it was.

If you are alone, make yourself a fabulous dinner anyway. Cooking not your thing? Cheat. Buy it. No oneโs judging. But, even if you donโt really cook, perhaps itโs a good day to start. It really can be a satisfying activity. You might enjoy it! No? Okay, I tried.
Give yourself some gifts! Spend the day pampering your self! Buy yourself some warm and snuggly pajamas or loungewear. Take a long hot bath and then spend the day lounging! Play some holiday music. Wait until Christmas Eve to decorate your tree. (Charlie Brown or otherwise)

My all time favorite holiday fun is binge-watching all of the best holiday movies and Christmas classics. Come on now! How can you feel bad after watching the abominable snowman change his ways or Yukon Cornelius come back from the dead? Bumbles bounce! And the misfit toys getting rescued! Come on now! If you are not familiar with the Burgermeister Meisterburger, Heat Miser and Snow Miser, you havenโt lived!
You cannot watch those shows and not feel better about the world! (Yes, even in 2020! Okay, at least itโs a fun distraction.) This is something you can do alone or with the family! Holiday movie marathon!
Alone and adult? Check out three of my favorite holiday flicks. Love Actually, The Family Stone and The Holiday! Great holiday films! Just not really for kids. (Looking at the young Jude Law in the Holiday should take your mind off things! On 2nd thoughtโฆโฆ.) Hey, youโre alone. No oneโs watching. Yup! Whatever it is you assume that Iโm suggesting, Iโm probably suggesting. That will be a great conversation when someone asks you what you did for the holiday!
Just because you canโt be physically together (Different topic now. Keep up!) doesnโt mean you canโt see your friends and family! You can always make a virtual dinner date or host an online party. Itโs not the same, but at least when someone gets on your nerves you can claim the Wi-Fi went out!

Another fun thing to do is a holiday lights tour. My friend and I used to ride around and check out peopleโs Christmas lights. Some were beautiful! Some were downright hilarious and gaudy as hell, but it was always entertaining. My fav was the one that had the Rudolph and Santa right next to baby Jesus. How is baby Jesus supposed to sleep with Rudolphโs nose flashing? It gets better! Star Wars was involved! Disney characters on the back of the Three Wisemanโs camels. I had never seen such an insane holiday display. We were dying laughing.
Christmas 2020 is definitely going to be one holiday that we will probably never forget. Soโฆ.get creative. Get your craft on and make an ornament to commemorate 2020! Go online for inspiration then hit Micheals or Amazon for materials so you have a selection to choose from for your 2020 creation! It can be outrageous or sentimental.

Now, what to eat? If you happen to have a family, but want to downscale, not only the amount of food but the amount of preparation as well, I have some suggestions for you! Some of them will make your meal prep easier, while others will make your meal healthier! (You knew that was coming!)
I havenโt done a traditional holiday meal in forever. I cannot tell you the last time I cooked a turkey! Last year, I did an Italian inspired buffet and the year before, I went straight NOLA with Jambalaya and Gumbo! This year, Iโm thinking about going Seafood Fest! Put that broiler to work! Steamed crab legs, crab cakes, Lobster Tails, and oysters. Looking at the brighter side! This is a lot more economical when you have a small group!
Of course Plan B is to support a restaurant I love and order my dinner! (Plan B is also sounding really good after a few fifteen-hour days!)
Whether you choose to stay close to the traditional holiday dinner (scaling back or down) or switch it up a bit, here are some suggestions:
Letโs start with skipping the turkey and ham. You want pork? Try stuffing a pork loin with a boatload of garlic and a paste made from olive oil and chopped herbs like sage, and rosemary. (I love garlic. Canโt you tell?)
I am so in love with Spatchcocked (split w/backbone removed. Theyโre easy to find now in markets. Trader Joes and Wholefoods should have them.) Chicken roasted in a cast iron skillet! Recently, I put one in a container, drowned it in garlic cloves, (I shoved some cloves under the skin too!) kosher salt, pepper, a little lemon juice, few sprigs of rosemary and buttermilk for a day. The next day, I rinsed it off and dried the skin with some paper towels. I salted it, stuck it back in the fridge on a rack to let the skin dry out a bit. (The dryer the skin, the crispier it will be!) After letting it sit out in room temp for a while, I browned that baby skin-side down in a little oil with a 2nd cast iron skillet on it to weigh it down flat. (You can actually use a clean brick wrapped in foil) I flipped it over and roasted it in the oven until cooked through, which is a lot less time consuming. It was THEE best chicken I have ever made. The skin was crispy and the meat flavorful and moist! Who needs a turkey and some white-floured up gravy? Not I! Nor will you. Try it.
If you still want turkey, try a bone in turkey breast. Allow 1lb per person. It will cook a hell of a lot faster and you wonโt have a fridge full of leftovers. If you like dark meat, go for legs. Try the one sheet pan prep. Roast the turkey along with some flavorful root vegetables. (Winter squash, sweet potatoes, parsnips along with some red onion chunks, sage or rosemary, garlic, salt and pepper!) How about a butternut squash hash or some kicked up antioxidant rich cranberry sauce? (Sooooo good made fresh and easier than you might think!)
Braised carrots are not only great for you, but theyโre easy to prepare! Skip the mashed potatoes and just go for smashed! Better yet, substitute with sweets! White potatoes are just no match for the nutrient packed sweets. Just donโt ruin them smothering them in syrup, sugar, more sugar and marshmallows! There are so many varieties and until recently, I hadnโt realized how different they all taste. The Japanese sweet potatoes are sweet all by themselves. Try roasting sweets with pear and sweet onions.

You know what else is easy and yummy and can be just as satisfying? A nice hearty winter stew! Yum! Whole roasted cauliflower! Or mashed cauliflower. That said; if you really need the comfort of a mashed potato, go for it. All bets are off this year. Everyone gets a pass.
Actually, I feel bad! My intention was to develop and present a few recipes and some inspiration of my own. Sadly, I just couldnโt find the time. We are currently in production (my day job) and back to the fifteen-hour days for another week this year.
Like most, this has just been a crazy year for me and mine. I set some pretty ambitious goals. Starting this blog, a newsletter, planning a podcast and writing a new production. Typically, I would beat myself up for not checking everything off my to do / to be list, but I decided to do something that for years I have always been unable to do. โGive myself a break and an A for effort!โ Thatโs my holiday gift to me! A BREAK!
I have a much-needed vacation coming up over the holidays. And it is going to be different this year for me as well. Because this year it is highly likely that I am going to enjoy doing ABSOLUTELY NOTHING! Other than rewriting a script, writing my long overdue newsletter and fighting with the NJ DMV so I can finally drive my car that has been parked and covered for almost six months!
